  • to taste salt & pepper Essential for flavor.
  • 1 tsp red pepper flakes Adjust based on spice preference.

For the Fresh Veggie Salsa

  • 1 cup cucumbers Diced.
  • 1 cup tomatoes Deseeded.
  • 1 cup bell pepper Any color.
  • 1/2 cup red onion Adjusted to taste.
  • 1/4 cup parsley Optional for garnish.
  • 1/2 cup feta cheese Goat cheese is a substitute.

For Serving

  • 4 pitas Whole wheat is a healthier option.
  • 1 cup tzatziki Homemade or store-bought.

Preparation Steps

  • Marinate Chicken: In a mixing bowl, whisk together olive oil, lemon juice, minced garlic, oregano, paprika, salt, pepper, and red pepper flakes. Toss in chicken chunks and let marinate for 15 to 45 minutes.
  • Prepare Salsa: While chicken is marinating, combine diced cucumbers, tomatoes, bell pepper, red onion, parsley, and feta in a bowl. Dress with lemon juice, salt, and pepper. Allow sitting for at least 10 minutes.
  • Cook Chicken: Heat a skillet over medium-high heat. Add marinated chicken in a single layer and cook for 3-5 minutes on each side until golden brown and internal temperature reaches 165°F.
  • Warm Pitas: While chicken is cooking, warm pita bread until pliable and soft.
  • Assemble Tacos: Fill each pita with cooked chicken, spoon fresh veggie salsa on top, and drizzle with tzatziki sauce.
