  • 1 medium onion diced
  • 1 medium bell pepper diced
  • 4 cloves garlic minced

  • 1 teaspoon paprika smoked paprika can elevate flavor
  • 1 teaspoon cayenne adjust according to spice tolerance
  • 1/2 teaspoon black pepper fresh ground preferred
  • 1 teaspoon salt adjust based on broth saltiness

For the Main Ingredients

  • 4 cups chicken stock low-sodium recommended
  • 1 teaspoon chipotle powder optional
  • 2 cans black beans rinsed
  • 1 cup corn fresh, frozen, or canned
  • 2 cups cooked turkey shredded or cubed
  • 2 limes limes zest and juice
  • 1/4 cup fresh cilantro for garnish

Preparation

  • Start by dicing the onion and bell pepper, then mince the garlic. Don’t forget to zest and juice the limes to brighten the dish later on!
  • Heat olive oil in a large pot over medium heat. Add the diced onions and bell peppers; sauté for about 5-10 minutes until they become softened and translucent.
  • Stir in the minced garlic and sauté for 30 seconds. Add cumin, paprika, cayenne, black pepper, salt, and chipotle powder, cooking for another minute until fragrant.
  • Pour in the chicken stock, bringing it to a boil. Once boiling, reduce the heat and let it simmer gently for 2-3 minutes to meld the flavors.
  • Stir in the rinsed black beans, corn, cooked turkey, and lime zest. Allow it to simmer for about 5 minutes to combine all those delicious flavors.
  • Remove from heat, then gently stir in the lime juice and fresh cilantro just before serving for that fresh burst of flavor.

Notes

Top with shredded cheese or sliced avocado for an extra creamy touch. Adjust spices and ingredients based on taste preferences.
