Ingredients
  

For the Soup Base

  • 1 tablespoon cooking oil neutral oil such as canola or vegetable
  • 1 pound beef stew meat cut into 1-inch chunks
  • 3 large yellow onions sliced thinly
  • 2 cloves garlic minced
  • 1 teaspoon sugar for caramelizing onions
  • 2 tablespoons flour to thicken
  • 1 leaf bay leaf remove before serving
  • 4 cups beef stock homemade or low-sodium
  • 1 cup dry white wine or broth for non-alcoholic substitute
  • 1 tablespoon Worcestershire sauce adjust to taste
  • 1 teaspoon ground black pepper to taste
  • 1 teaspoon salt to taste

For the Topping

  • 1 loaf French baguette toasted
  • 2 cups Gruyere cheese shredded

Cooking Instructions

  • Heat oil in a heavy pot over medium-high heat, brown beef stew meat for 3-4 minutes on each side. Season with salt and pepper, then set aside.
  • Pour in 1 cup of beef stock to deglaze the pot, scraping the browned bits from the bottom, then return the liquid to the beef.
  • Melt 2 tablespoons of unsalted butter in the same pot, add sliced onions and a pinch of sugar. Cook low and slow for 30-40 minutes until caramelized.
  • Add 2 cloves of minced garlic and cook for an additional 2 minutes until fragrant.
  • Stir in 2 tablespoons of flour and cook for 1-2 minutes to help thicken the soup.
  • Return the browned beef and any juices to the pot. Add remaining beef stock, a splash of dry white wine, Worcestershire sauce, bay leaf, and black pepper. Stir to combine.
  • Bring the soup to a gentle simmer, reduce heat to low, and let bubble for about 2 hours until beef is tender.
  • Ladle soup into oven-safe bowls, top with toasted baguette slices and shredded Gruyere cheese.
  • Broil for 2-3 minutes until cheese is melted and golden brown.
  • Allow to cool slightly before serving.

Notes

Optional: Sprinkle with fresh thyme leaves before serving for extra flavor.
