Ingredients
  

For the Stew Base

  • 2 pounds Beef Chuck Stew Meat or lamb for a traditional twist
  • 2 tablespoons Extra-Virgin Olive Oil for searing
  • 1 teaspoon Kosher Salt
  • 1 teaspoon Freshly Ground Black Pepper

For the Vegetables

  • 1 large Yellow Onion chopped
  • 2 medium Carrots sliced
  • 2 stalks Celery chopped
  • 3 cloves Garlic minced

For the Hearty Finish

  • 2 large Russet Potatoes diced
  • 4 cups Low-Sodium Beef Broth
  • 1 can Guinness Stout about 14.9 ounces

For Garnishing

  • 2 tablespoons Fresh Thyme
  • 2 tablespoons Fresh Parsley chopped

Cooking Steps

  • Generously season cubed beef chuck with kosher salt and freshly ground black pepper.
  • Heat extra-virgin olive oil in a large Dutch oven over medium heat. Sear the beef in two batches until it’s nicely browned, about 10 minutes per batch.
  • In the same pot, add more olive oil if needed, then toss in chopped onion, carrots, and celery. Sauté until the vegetables soften, about 5 minutes. Add minced garlic and cook for an additional minute until fragrant.
  • Return the sautéed beef along with any juices to the pot. Add diced potatoes, beef broth, Guinness stout, fresh thyme, and a pinch of seasoning. Bring everything to a gentle boil.
  • Reduce the heat to low, cover, and let the stew simmer for about 30 minutes, or until the beef and potatoes are tender.
  • Ladle the hearty Irish stew into bowls, garnishing with fresh parsley. Serve with crusty bread or creamy mashed potatoes.

Notes

For an extra twist, add a splash of cream before serving.
