  • 1 medium Potato diced
  • 1 medium Carrot optional, sliced
  • 1 cup Red Lentils rinsed

  • 2 tablespoons Vegetable Oil or olive oil
  • 1 teaspoon Salt to taste
  • 1 teaspoon Cumin Powder
  • 1 teaspoon Turmeric
  • 1 teaspoon Black Pepper to taste

For the Broth

  • 4 cups Water or Chicken Broth for vegan option, use vegetable stock
  • 1 cube Chicken Stock Cube optional

For the Finishing Touches

  • 2 tablespoons Lemon Juice optional
  • 1 cup Crunchy Pita Chips optional, for serving

How to Make Lentil Soup

  • Prep the Vegetables: Begin by chopping the onions, dicing the potatoes, and slicing the carrots if you choose to include them.
  • Sauté: In your Instant Pot, select ‘SAUTE,’ and add the vegetable oil. Sauté the onions and potatoes (and carrots) for about 5 minutes until they soften and become slightly caramelized.
  • Spice It Up: Next, sprinkle in the cumin, turmeric, and black pepper. Cook for an additional minute.
  • Combine Ingredients: Stir in the rinsed red lentils and pour in the water or chicken broth.
  • Cook: Close the lid and choose the pressure cook setting for 15 minutes or cover your pot and simmer for 40-60 minutes on the stovetop.
  • Blend: Use an immersion blender to blend the soup to your desired level of smoothness.
  • Season & Serve: Taste your soup and adjust the seasoning. Serve hot, garnished with lemon juice and pita chips.
