Ingredients
  

For the Sausage Mixture

  • 5 lbs ground meat (pork and beef mix) for ideal texture and flavor
  • 1 large onion finely chopped
  • 5 cloves garlic crushed or minced
  • 1 tbsp chopped bay leaves
  • 2 tbsp yellow mustard seeds
  • 1 tbsp salt
  • 1 tbsp ground pepper adjust for preferred heat level

For the Casing

  • 2 long sausage casings soaked in water beforehand

Preparation

  • Combine your ground meat, onion, garlic, bay leaves, mustard seeds, salt, and pepper in a large bowl. Use your hands to mix everything thoroughly until well incorporated—this should take about 5 minutes.
  • Prepare the sausage casings by running water through them to wash away excess salt.
  • Assemble your grinder by removing the cutting knife and attaching the stuffer. Slide the casing completely over the piping piece, making sure it’s secure.
  • Fill the grinder with your meat mixture. Hold the sausage casing taut and slowly push down on the plunger to fill the casing with the meat.
  • Tie off the casing once it's fully stuffed, twisting it tightly at regular intervals.
  • Preheat your oven to 350°F. Place your stuffed sausages on a baking tray and poke small holes all over with a toothpick.
  • Bake the kielbasa sausages for about 30 minutes, or until they turn a beautiful golden brown.

Notes

Serve with mustard or sauerkraut for an extra kick of flavor. Ensure sausages are stored properly in the fridge or freezer.
