  • Wash and Prepare: Rinse the rainbow carrots under cold water and pat them dry. Preheat your oven to 375℉ and line a baking sheet with parchment paper.
  • Trim the Carrots: Cut off the tops of the carrots if necessary and arrange them in a single layer on the baking sheet.
  • Mix the Glaze: Whisk together balsamic vinegar, honey, olive oil, onion powder, garlic powder, and salt until smooth.
  • Coat the Carrots: Generously coat each carrot with the glaze using your hands or a brush.
  • Bake Covered: Cover with foil and bake for 30 minutes.
  • Bake Uncovered: Remove foil and continue baking for another 20 minutes until golden brown and fork-tender.
  • Prepare the Ricotta: Blend ricotta, lemon zest, lemon juice, minced garlic, honey, and olive oil in a food processor until smooth.
  • Chop Pistachios: Chop pistachios to desired size for topping.
  • Assemble the Dish: Spread whipped ricotta on a serving plate and arrange roasted carrots on top. Sprinkle with chopped pistachios.

Notes
