Ingredients
  

For the Chicken

  • 1 tbsp Avocado Oil Substitute with olive oil if preferred.
  • 1.25 lbs Boneless Chicken Breasts Halving ensures quick and even cooking.

For the Hot Honey Sauce

  • 1/3 cup Honey Agave syrup as a vegan alternative.
  • 2-3 tbsp Sriracha Use your favorite hot sauce for extra spice.
  • 2 tsp Minced Garlic Fresh garlic is best for robust taste.
  • 1 tsp Salt Enhances all flavors.
  • 1/2 tsp Pepper Adds mild warmth.
  • 1/4 tsp Cayenne Optional for an extra kick.
  • 1/4 tsp Crushed Red Pepper Optional for added spice.

For the Vegetables

  • 2 medium Zucchini Swap for yellow squash or bell peppers.
  • 1 medium Summer Squash Light and sweet addition.
  • 1.5 cups Shredded Carrots Other shredded veggies can be used.

For Serving

  • 2 cups Cooked Rice Quinoa for gluten-free alternative.

How to Make Hot Honey Chicken Bowls

  • Heat avocado oil in a skillet over medium-high heat. Add boneless chicken breasts and cook for 5 minutes on each side, until they are golden brown and cooked through.
  • In a bowl, whisk together honey, sriracha, minced garlic, salt, pepper, cayenne, and crushed red pepper until well blended.
  • Remove the chicken from the skillet, lower the heat, and toss in the zucchini and summer squash. Sauté for 1-2 minutes until they’re slightly tender.
  • Layer the shredded carrots over the sautéed vegetables, then place the chicken back into the skillet. Pour the hot honey sauce over everything.
  • Preheat your oven to 400°F (200°C). Transfer the skillet to the oven and bake for 15 minutes, stirring the vegetables halfway through.
  • Switch your oven to high broil and broil for 3-5 minutes to caramelize the sauce.
  • Remove from oven, cube the chicken, mix with extra hot honey sauce, and serve over cooked rice with veggies.

Notes

Optional: Garnish with fresh cilantro for an added burst of flavor. Prepare in advance without toppings to keep fresh in the fridge for 5-7 days.
