  • In a dry skillet, toast the chopped walnuts for about 3-4 minutes until they become fragrant.
  • In a large mixing bowl, beat the softened butter and sugar together until pale and fluffy.
  • Peel and mash your overripe bananas in a separate bowl. Stir them into the creamed butter and sugar.
  • Add the large eggs one at a time, mixing well after each addition.
  • In a separate bowl, whisk together the sifted flour, baking soda, salt, and ground cinnamon.
  • Gently fold the dry mixture into the wet ingredients until just combined, then add the vanilla extract.
  • Fold in the toasted walnuts and raisins until evenly distributed.
  • Pour the batter into your prepared loaf pan, smoothing the top.
  • Bake for 55-60 minutes, checking for doneness around the 50-minute mark.
