Preparation

  • Prepare the dish: Spray a 13x9 glass pan with cooking spray and evenly spread out the cubed brioche bread in the pan.
  • Mix the custard: In a medium-sized bowl, whisk together the brown sugar, cinnamon, nutmeg, and salt. Then mix in the melted butter until combined. Add the eggs, milk, heavy cream, and vanilla extract, whisking until everything is smooth.
  • Combine with bread: Evenly pour the custard mixture over the top of the cubed bread. Gently toss the bread with a rubber spatula to coat most pieces.
  • Refrigerate overnight: Cover the pan and refrigerate overnight (max 12 hours) or a minimum of 3 hours.
  • Make the crumble topping: In a small bowl, stir together the flour, brown sugar, oats, cinnamon, and salt. Add cold cubed butter and stir until coated, then crumble until no large chunks remain.
  • Chill the topping: Cover and refrigerate the topping until ready to bake.
  • Bake to perfection: Preheat the oven to 350°F. Break up the topping into smaller pieces and spread evenly over the casserole.
