Ingredients
  

For the Truffles

  • 12 oz dark chocolate 60-70% cacao for best flavor
  • 3/4 cup heavy cream must be cold before heating
  • 1 tsp vanilla extract opt for pure vanilla
  • 1/2 tsp matcha powder sifted to remove lumps

For the Coating

  • 1/4 cup chopped pistachios finely chopped for better adhesion
  • 2 tbsp matcha powder for rolling; can swap with cocoa powder

Instructions
 

  • Chop the dark chocolate into small, uniform pieces and set aside the vanilla extract and cold cream.
  • In a saucepan, gently heat the heavy cream over medium heat until it just starts to simmer.
  • Pour the hot cream over the chopped chocolate and let it sit for 30 seconds. Whisk until smooth, then stir in the sifted matcha powder.
  • Transfer the ganache to a shallow bowl and refrigerate for 2-4 hours until firm but scoopable.
  • Scoop bits of chilled ganache and roll into balls quickly in your hands.
  • Roll each truffle in your chosen coating until fully covered.
  • Place the coated truffles back in the refrigerator for at least 30 minutes before serving.

Notes

Optional: Dust with additional matcha powder before serving for extra color and flavor.
