For the Crust

  • 2 cups graham cracker crumbs
  • cup sugar
  • ½ cup unsalted butter melted

For the Filling

  • 16 oz cream cheese softened
  • ½ cup sugar
  • 1 teaspoon vanilla extract
  • 3 large eggs
  • 8 oz white chocolate melted
  • 2 cups blueberries fresh or frozen

  • Preheat the oven to 325°F (163°C).
  • Combine graham cracker crumbs, ⅓ cup sugar, and melted butter in a medium bowl. Stir until well mixed, then press this mixture into the bottom of a 9-inch springform pan to form a solid crust.
  • Beat cream cheese and ½ cup sugar together in a large bowl until smooth.
  • Add the vanilla extract and mix well.
  • Incorporate the eggs one at a time, mixing well after each addition.
  • Stir in the melted white chocolate until fully combined.
  • Fold in the blueberries gently.
  • Pour the batter over the crust in the springform pan, smoothing the top.
  • Bake for 60 minutes, or until the center is set but slightly jiggly.
  • Cool the cheesecake completely at room temperature before refrigerating it for at least 4 hours or preferably overnight.
