How to Make Churro Cookies

  • Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • Combine butter, granulated sugar, and light brown sugar in a large bowl using a mixer, beat until light and fluffy, about 2-3 minutes.
  • Add the egg and vanilla extract to the butter mixture, beat until combined.
  • Mix in the flour, salt, baking soda, and ground cinnamon until just combined.
  • Roll cookie dough into 1 ½ tablespoon-sized balls to form about 22 balls.
  • Prepare the cinnamon sugar coating by mixing the granulated sugar and cinnamon in a shallow bowl.
  • Coat each cookie dough ball in the cinnamon sugar mixture.
  • Arrange cookies on the baking sheet, spacing about 2 inches apart, and bake for 8-10 minutes.
