  • 1/2 cup Heavy Cream Coconut cream serves as a non-dairy substitute.

For Final Touches

  • Boil Potatoes: Start by peeling and cutting the Yukon Gold potatoes into chunks. Place them in a pot, cover with cold water, add a generous pinch of salt, and bring to a boil. Cook until fork-tender, about 10-15 minutes. Drain and set aside.
  • Sauté Aromatics: In the same pot, melt 4 tablespoons of butter over low heat. Add the white parts of the scallions and crushed garlic. Sauté for about 3-4 minutes until they are soft and fragrant, stirring frequently to avoid burning.
  • Add Greens: Stir in the sliced kale, along with the milk and heavy cream. Cook this mixture for about 4 minutes, allowing the milk to simmer gently and the kale to wilt down.
  • Mash Together: Combine the kale mixture with the drained potatoes. Use a potato masher to blend them until smooth and creamy, ensuring that no lumps remain. Season with salt and freshly ground black pepper to taste.
  • Serve: Drizzle the remaining 2 tablespoons of melted butter over the colcannon before serving, allowing it to create a luxurious finish.
