Ingredients
  

  • #### For the Chicken
  • - 4 boneless skinless chicken breasts
  • - ½ tsp salt
  • - ½ tsp garlic powder
  • - ½ tsp onion powder
  • - ¼ tsp black pepper
  • #### For the Sauce
  • - 2 tbsp olive oil
  • - 2 tbsp butter
  • - 1½ cups chicken broth
  • - 3 tbsp cornstarch
  • - 1 cup heavy cream
  • - 4 garlic cloves minced
  • - 1½ tsp Italian seasoning
  • - ½ tsp salt
  • - ½ tsp black pepper
  • - ½ tsp red pepper flakes
  • - ½ tsp paprika
  • - ⅓ cup sun-dried tomatoes chopped
  • #### To Finish
  • - ½ cup grated parmesan cheese
  • - 6–8 fresh basil leaves chopped

Instructions
 

  • Mix seasoning and rub over chicken breasts.
  • Sear chicken in olive oil and butter until golden. Set aside.
  • Whisk broth and cornstarch; pour into slow cooker.
  • Add cream, garlic, spices, and tomatoes. Stir well.
  • Add chicken and pan drippings. Cook on LOW 6–8 hours.
  • Remove chicken, shred, and return to soup.
  • Stir in parmesan and basil before serving.

Notes

- Add lemon juice at the end for brightness
- Freeze before adding cream if meal prepping
- Serve over pasta, rice, or with crusty bread
