  • 1 cup Dates Medjool recommended, or soak Deglet Noor.

For Flavor

  • 1 teaspoon Vanilla Extract
  • 1/4 teaspoon Salt
  • 1 teaspoon Ground Cinnamon

For Optional Sweetness

  • 1/2 cup Chocolate Chips Semi-sweet mini chips work best.

For Consistency Adjustment

  • 1 teaspoon Water Add as needed to adjust consistency.

Steps

  • Preheat your oven to 350°F and toast the walnuts for about 5 minutes until fragrant and lightly browned.
  • Soak the pitted dates in warm water for 2-3 minutes, then drain well.
  • In a food processor, combine the toasted walnuts, oat flour, almond butter, drained dates, vanilla extract, salt, and ground cinnamon. Pulse for 30-45 seconds until it is crumbly yet holds together.
  • If the mixture feels too dry, slowly add water, one teaspoon at a time, until it reaches a cohesive sticky texture.
  • Transfer the mixture to a bowl and fold in the chocolate chips gently.
  • Roll portions of the mixture into smooth, round balls.
  • Refrigerate the energy balls on a parchment-lined plate for at least 30 minutes to firm up.

Notes
