How to Make Fresh Peach Cobbler

  • Preheat your oven to 350°F. Place a rimmed baking sheet lined with foil in the oven. Lightly grease a 9 x 11-inch baking dish or 11-inch oval baking dish.
  • In a large bowl, whisk together 1/2 cup of granulated sugar, 1/4 cup of arrowroot starch, and 1/8 teaspoon of salt. Add 6 cups of sliced fresh peaches, 1 teaspoon of lemon zest, and 2 tablespoons of lemon juice. Gently toss until combined, and then spoon the peach filling into your prepared baking dish.
  • In a medium bowl, whisk together 1 cup of all-purpose flour, 2/3 cup of granulated sugar, 1 teaspoon of baking powder, and 1/2 teaspoon of salt. Add 1/2 cup of melted unsalted butter, 1/4 cup of sour cream, and 1/2 teaspoon of vanilla extract. Fold together until a cookie-like dough forms, then drop by spoonfuls over the peach filling. Finally, sprinkle 2 tablespoons of turbinado sugar on top.
  • Place the baking dish on the preheated baking sheet and bake for 65 minutes, or until the topping is golden and the filling is bubbling. Move the baking dish to the top rack for the last 5 minutes for a golden top.
  • Allow the cobbler to cool on a wire rack for 1 hour before serving.
  • If you have leftovers, store them tightly covered or in an airtight container in the refrigerator for up to 2 days. Reheat in a 325°F oven for about 15 minutes.
