For the Casserole

  • 1.5 pounds green beans fresh or frozen, trimmed
  • 2 tablespoons extra-virgin olive oil
  • 16 ounces cremini mushrooms sliced
  • 2 tablespoons tamari gluten-free soy sauce alternative
  • 4 cloves garlic minced
  • 2 tablespoons fresh thyme leaves

For the Sauce

  • 0.25 cup all-purpose flour
  • 3 cups milk any kind
  • 1.5 teaspoons Dijon mustard
  • 0.5 cup grated Parmesan cheese plus more for sprinkling
  • 0.25 teaspoon freshly ground black pepper

For the Topping

  • 1.5 cups french fried onions

Instructions
 

Making the Casserole

  • Preheat the oven to 400°F. Lightly grease a 9x13-inch baking dish.
  • Blanch the green beans in a large pot of salted boiling water for 4 minutes, then plunge into ice water.
  • In a large skillet over medium heat, heat the olive oil and sauté the mushrooms for 8 to 10 minutes.
  • Stir in the tamari, garlic, and thyme. Sprinkle the flour over the mixture and stir to create a roux.
  • Whisk in the milk and Dijon mustard. Let simmer for 15 to 20 minutes until thickened.
  • Stir in Parmesan cheese and black pepper.
  • Layer ⅓ of the sauce in the baking dish, add green beans, then pour remaining sauce on top.
  • Sprinkle crispy onions over the top, cover with foil and bake for 10 minutes. Remove foil and bake uncovered for another 10 minutes.
  • Garnish with extra Parmesan if desired and serve hot.
