Ingredients
  

For the Potatoes

  • 4 large russet potatoes Choose firm and uniform potatoes
  • 2 tbsp olive oil

For the Seasoning

  • 1 tbsp kosher salt
  • 1 tsp black pepper
  • 1 tsp garlic powder

For the Toppings

  • 1 cup cheddar cheese (shredded)
  • 1 medium red bell pepper (diced)
  • 1 medium yellow onion (diced)
  • 6 slices bacon (cooked and chopped)
  • 1 cup sour cream
  • 2 tbsp chives (finely chopped) For garnish

Preparation

  • Preheat the oven to 375°F. Combine kosher salt, black pepper, and garlic powder in a small bowl.
  • Coat each potato with olive oil and rub the seasoning mixture evenly over the potatoes. Bake for 1 to 1.25 hours until tender.
  • Once out of the oven, let the potatoes cool slightly. Slit the tops and fluff the insides with a fork.
  • Load toppings: sprinkle cheese, bell pepper, onion, and bacon on each potato. For extra melt, return potatoes to the oven for a few minutes.
  • Garnish with sour cream and chives before serving.

Notes

Optional: Add jalapeños for a spicy kick. Ensure to store toppings separately when refrigerating leftovers for best texture.
