Ingredients
  

For the Chicken

  • 2 tablespoons Olive Oil Avocado oil can be used as an alternative.
  • 1 pound Boneless Skinless Chicken Thighs Chicken breast can be substituted if preferred.

For the Vegetables

  • 2 cups Broccoli Florets Both fresh and frozen work well.

For the Sauce

  • 2 tablespoons Unsalted Butter Ghee or any neutral oil can be used as a dairy-free option.
  • 3 cloves Minced Garlic Reduce to 1/4 tsp if using garlic powder.
  • 1 cup Heavy Whipping Cream Coconut cream can be used as a non-dairy substitute.

For the Cheese

  • 1 cup Shredded Cheddar Cheese More reserved for topping.
  • 1/2 cup Parmesan Cheese Nutritional yeast can be used as a dairy-free alternative.

For the Bacon

  • 1 cup Bacon Pieces Turkey bacon can be used as a lighter option.

Instructions
 

Preparation

  • Preheat the oven to 350°F (175°C).
  • In a skillet, heat olive oil over medium-high heat. Season boneless chicken thighs with salt and pepper, cooking until they’re no longer pink inside—about 5-7 minutes.
  • Bring a pot of water to a boil, add broccoli florets, and cook until slightly tender, about 2-3 minutes. Drain and rinse with cold water to preserve color.
  • In a greased 9x13 casserole dish, layer the sautéed chicken and blanched broccoli.
  • In a saucepan, melt unsalted butter on medium heat. Sauté minced garlic for 30 seconds, then stir in heavy whipping cream, whisking for about 2-3 minutes until thickened.
  • Remove from heat and mix in 1 cup of shredded cheddar and parmesan until fully melted. Gently fold in bacon pieces.
  • Pour the cheese sauce over the chicken and broccoli, stirring to combine thoroughly. Sprinkle the remaining cheddar on top.
  • Place in the preheated oven for 20 minutes or until heated through and the cheese is bubbly and golden.

Notes

Store leftovers in an airtight container for up to 5 days and reheat in the oven for best texture.
