Steps to Make Maamoul Cookies

  • Prepare Filling: Pulse pecans in a food processor until roughly chopped, then process dates with sugar, coconut oil, and ground cinnamon until smooth. Combine with chopped nuts for filling.
  • Make Dough: Cream unsalted butter, granulated sugar, and egg in a stand mixer until fluffy. Gradually mix in all-purpose flour until dough is smooth.
  • Shape Cookies: Scoop tablespoon-sized portions of dough, roll into balls, press into shape, and fill with date-nut mixture.
