  • 1 cup sharp cheddar cheese shredded
  • 1 cup Monterey Jack cheese shredded

For the Spread

  • 1/2 cup mayonnaise
  • 1/4 cup onion very finely minced
  • 1 tsp garlic powder
  • 1/4 tsp cayenne pepper adjust to taste
  • 1 tsp salt
  • 1/2 tsp black pepper just a dash

For the Pimentos and Bread

  • 1 cup pimientos small diced and drained
  • 4 slices white bread classic choice

Preparation Steps

  • Soften the cream cheese by leaving it at room temperature for about 15 minutes.
  • In a medium-sized bowl, combine softened cream cheese, sharp cheddar, Monterey Jack, mayonnaise, minced onion, garlic powder, cayenne pepper, salt, and black pepper.
  • Mix it well using a large wooden spoon until the mixture is smooth and creamy.
  • Drain the diced pimentos in a fine mesh strainer to remove excess juice.
  • Fold the drained pimentos into the cheese mixture gently.
  • Take two slices of white bread and scoop 1/3 cup of the pimento cheese onto one slice.
  • Spread the pimento cheese evenly over the bread slices.
  • Slice the sandwich diagonally into two triangles.
  • Wrap the sandwich in a colorful wrapper for freshness until serving.
