Peach Filling

  • 6 cups fresh peaches, peeled, cored, and cut into 1-inch slices
  • 1 cup light brown sugar, packed
  • 1 tbsp cornstarch
  • 2 tbsp all-purpose flour or almond flour
  • 1/2 tsp salt
  • 1/2 tbsp cinnamon

Topping

  • 1 1/2 cups old fashioned oats
  • 1/2 cup granulated sugar
  • 1/2 tbsp cinnamon
  • 1/2 cup all-purpose flour or almond flour
  • 1/2 cup unsalted butter, melted

Instructions
 

Baking Instructions

  • Preheat the oven to 350°F.
  • Prepare a 9" x 9" baking dish by lightly spraying it with nonstick spray or buttering it.
  • Mix together the peaches, brown sugar, cornstarch, flour, salt, and cinnamon in a large bowl until well combined. Pour into the prepared baking dish.
  • Cream together the melted butter, granulated sugar, flour, and cinnamon using a hand mixer until it's light and fluffy. Gently fold in the oats until crumbly.
  • Dot the oat mixture evenly over the peach filling, leaving some patches of fruit visible.
  • Bake for 45-50 minutes, until the crisp is bubbly and the topping is golden brown.
  • Serve warm, with a scoop of ice cream or dollop of whipped cream.

Notes

Optional: Drizzle with caramel sauce for extra sweetness. Choose ripe peaches for the best flavor.
