For the Cheese Mixture

  • 2 cups extra-sharp Cheddar cheese freshly grated
  • 8 ounces cream cheese softened at room temperature
  • 4 ounces pimento peppers well drained and chopped

For the Flavoring

  • 2 tablespoons mayonnaise
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • 1/4 teaspoon ground cayenne pepper
  • 1/2 medium jalapeño pepper minced; ribs and seeds removed
  • freshly ground black pepper to taste
  • salt to taste

How to Make Pimento Cheese

  • In a large mixing bowl or the bowl of your stand mixer, mix the cheddar, cream cheese, pimento peppers, mayonnaise, garlic powder, onion powder, cayenne pepper, minced jalapeño (if using), and black pepper until well incorporated.
  • Using a hand mixer, stand mixer, or a sturdy wooden spoon, beat the mixture until smooth and creamy for about 1-2 minutes.
  • Taste your pimento cheese and adjust the black pepper and/or salt as needed. For more heat, consider adding another pinch of cayenne.
  • Transfer your mixture to a smaller serving bowl. Enjoy it right away or chill in the refrigerator; allow it to rest for 30 minutes at room temperature before serving for optimal creaminess.

Notes

Pimento cheese can be stored in an airtight container in the fridge for up to a week, or frozen for up to 3 months. Allow it to soften at room temperature before serving again for optimal spreadability.
