How to Make Smooth White Chocolate Truffles

  • Combine chocolate chips and chopped white chocolate in a microwave-safe bowl. Heat in 30-second intervals, stirring thoroughly until silky smooth—about 1-2 minutes total.
  • Stir in room-temperature heavy cream and vanilla extract into the melted chocolate. Mix until glossy and well-combined.
  • Cover the bowl with plastic wrap and refrigerate for 2-3 hours, or until the mixture is firm enough to scoop easily.
  • Scoop out portions of the chilled ganache using a tablespoon, rolling them into 1-inch balls. Place the truffles on a parchment-lined baking tray.
  • In a separate bowl, melt more white chocolate for coating in 20-30 second intervals. Let it cool slightly until it’s around 85-90°F for optimal dipping.
  • Dip each chilled ganache ball into the melted chocolate, allowing excess to drip off before placing it back on the tray. Quickly sprinkle toppings while the coating is still wet.
  • Allow the coated truffles to set at room temperature for 30-45 minutes, until they’re firm and ready to enjoy.
  • For an extra touch, drizzle additional melted white chocolate over the tops and dust with powdered sugar before serving!

Notes
