For the Casserole

  • 2 tablespoons Butter melted for sautéing squash
  • 4 cups Yellow Squash sliced
  • 1 medium Onion chopped
  • 2 large Eggs
  • 1 cup Cheddar Cheese grated
  • 1 cup Milk
  • ¼ teaspoon Cayenne Pepper optional
  • ½ teaspoon Kosher Salt
  • ½ teaspoon Ground Black Pepper

For the Topping

  • 1 sleeve Ritz Crackers crushed

Directions

  • Preheat your oven to 350º F.
  • Melt 2 tablespoons of butter in a medium skillet over medium-low heat. Add the sliced yellow squash and chopped onion, cooking until tender, about 5-7 minutes.
  • Whisk together 2 large eggs in a large bowl until lightly frothy. Add grated cheddar cheese and milk, whisking until well combined.
  • Combine the sautéed squash and onions into the egg mixture, stirring until evenly mixed.
  • Melt the remaining 2 tablespoons of butter in the skillet. Add to the casserole mixture, then sprinkle in cayenne pepper, kosher salt, and black pepper. Stir until incorporated.
  • Pour the casserole mixture into a greased 9x13 baking dish. Top with crushed Ritz crackers.
  • Bake in the preheated oven for 45 minutes.
  • Rest the casserole for about 3 minutes before serving.
