How to Make Spring M&M Cookies

  • Preheat the oven to 350°F (175°C) and line two baking sheets with parchment paper.
  • Whisk the dry ingredients together in a medium mixing bowl—flour, cornstarch, baking powder, baking soda, and salt.
  • Cream the butter and sugars in a stand mixer fitted with a paddle attachment for about 2-3 minutes.
  • Add the egg and vanilla extract, then mix until just combined.
  • Gradually incorporate the dry mixture into the wet ingredients until combined.
  • Fold in the pastel M&Ms and semi-sweet chocolate chips using a rubber spatula.
  • Scoop 2 tablespoons of dough and place onto the prepared baking sheets.
  • Bake for 8-10 minutes, but remove them from the oven at the 8-minute mark.
  • Swirl a circular cup or cookie cutter around the cookies immediately after taking them out of the oven.
