  • 0.25 cup brown sugar
  • 1 large egg
  • 1.5 teaspoons vanilla extract

How to Make Strawberry Shortcake Cookies

  • Combine strawberries, lemon juice, and sugar in a small bowl and let soak for 10 minutes, then strain.
  • Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • Whisk together flour, baking powder, and salt in a medium bowl.
  • Cream butter with granulated and brown sugars until fluffy. Add egg and vanilla, mixing until combined.
  • Gradually incorporate dry ingredients into the wet mixture to form a soft dough.
  • Fold strawberries gently into the dough.
  • Scoop dough using a 1.5 tablespoon cookie scoop and place on the prepared baking sheet, 2 inches apart.
  • Bake for 18-20 minutes, checking at 15 minutes, until bottoms are golden brown.
  • Cool on the baking sheet for 5 minutes before transferring to a wire rack.
