Making the Soup

  • Start by warming a large pot over medium heat. Add the butter, letting it melt while you swirl the pot to coat the surface evenly.
  • Once the butter is melted and not bubbling, add the diced potatoes, chopped onions, and minced garlic. Stir well and let them simmer for 5 to 6 minutes, until the onions are soft and potatoes begin to soften.
  • Pour in the chicken broth along with 4 cups of corn kernels. Stir to combine, scraping any flavorful bits stuck to the pot’s bottom as you go.
  • Increase the heat to medium-high and bring the mixture to a boil. Once boiling, reduce the heat to medium-low and let it simmer uncovered for about 10 to 12 minutes, or until the potatoes and corn are tender.
  • Carefully remove the pot from heat and let it cool slightly. Use an immersion blender to purée the soup until silky smooth.
  • Stir in the heavy cream, mixing until it’s completely blended into the soup for that irresistible creaminess.
  • Return the pot to medium-low heat and add the remaining 1 cup of corn kernels along with the fresh lime juice. Season with salt and pepper to your taste, and let it simmer for another 5 minutes until the corn is tender.
  • Divide the soup into bowls and feel free to top with chopped chives or cilantro for a fresh finish. Serve warm with lime wedges on the side.
