For the Casserole

  • 1.5 tablespoons Butter melted
  • 6 cups Yellow Squash sliced
  • 0.5 medium Vidalia Onion chopped
  • 1 teaspoon Salt
  • 1 large Egg lightly beaten
  • 4 ounces Sharp Cheddar Cheese shredded
  • 2 ounces Gruyere Cheese shredded
  • 0.5 cup Sour Cream
  • 0.25 cup Mayonnaise
  • 1 teaspoon Fresh Thyme

For the Topping

  • 0.5 sleeve Ritz Crackers crushed
  • 2 tablespoons Butter melted
  • 2 tablespoons Parmesan Cheese finely grated
  • 1 teaspoon Parsley chopped

How to Make Squash Casserole with Ritz Crackers

  • Preheat your oven to 350ºF. Lightly butter a 2-quart baking dish.
  • Melt 1 ½ tablespoons of butter in a skillet. Add the yellow squash, Vidalia onions, and ½ teaspoon salt. Cook until the squash is tender, about 10 minutes.
  • Pour the mixture into a colander to drain excess liquid.
  • In a bowl, whisk together the beaten egg, sour cream, mayonnaise, cheeses, thyme, remaining salt, and pepper. Fold in the drained squash and onions, and transfer to the baking dish.
  • Melt 2 tablespoons of butter. Combine with the crushed Ritz crackers, parmesan cheese, and parsley. Sprinkle over the squash mixture.
  • Bake for 20 minutes, or until the topping is golden brown.
