Ingredients
  

For the Potatoes

  • 2 pounds Red Potatoes Can substitute with Yukon Gold or fingerlings.
  • 3 tablespoons Olive Oil Can be replaced with vegetable oil.
  • to taste Salt
  • to taste Pepper

For the Flavor

  • 1 cup Grated Parmesan Cheese Avoid using shredded cheese.
  • 4 cloves Garlic Minced.
  • 2 tablespoons Chopped Fresh Rosemary Optional; can substitute with 1½ tsp of Italian seasoning.

For Garnish

  • 2 tablespoons Chopped Fresh Parsley

Preparation Steps

  • Preheat your oven to 400°F (200°C).
  • Lightly spray a rimmed baking sheet with non-stick spray and dust with flour.
  • Combine potato chunks, olive oil, Parmesan, salt, pepper, and rosemary in a mixing bowl. Toss until well-coated.
  • Spread potato mixture on prepared baking sheet in a single layer.
  • Bake for 30 minutes until bottom is golden brown.
  • Toss the potatoes with the minced garlic and return to oven.
  • Bake for an additional 15 minutes, until tender and lightly browned.
  • Sprinkle with chopped parsley and serve immediately.

Notes

Serve with a squeeze of lemon juice for an extra bright flavor. Leftover potatoes can be stored in an airtight container in the fridge for up to 3 days or frozen for up to 2 months.
