Ingredients
  

  • **For the soup**
  • - 1 lb ground beef
  • - 3 garlic cloves minced
  • - ½ yellow onion diced
  • - ½ tsp garlic powder
  • - ½ tsp onion powder
  • - ¼ tsp dried basil
  • - ½ tsp dried oregano
  • - 1 tsp kosher salt
  • - Black pepper to taste
  • - 14 oz crushed tomatoes
  • - 32 oz chicken broth
  • - 1 cup water
  • - 2 tsp tomato paste
  • - 6 oz lasagna noodles broken
  • - 1 cup frozen chopped spinach
  • - ¼ cup heavy cream
  • **For serving**
  • - Ricotta cheese
  • - 4 oz mozzarella sliced
  • - Parmesan cheese optional

Instructions
 

  • Brown ground beef in a large pot. Drain grease.
  • Add garlic, onion, spices, and cook 5 minutes.
  • Stir in tomatoes, broth, water, and tomato paste. Add noodles. Simmer 10 minutes.
  • Add spinach and cream. Simmer 5 more minutes.
  • Place mozzarella in bowls, ladle soup on top, finish with ricotta and Parmesan.

Notes

- Use Italian sausage instead of beef for a spicier twist
- Add more broth when reheating leftovers
- Skip the cream or use dairy-free if needed
