How to Make Lemon Blueberry Cake

  • Preheat your oven to 350ºF. Grease three 9” cake pans and line them with parchment paper for easy removal.
  • In a large bowl, prepare the vanilla cake mix according to the package instructions. Stir in the juice and zest of 1½ lemons until well combined.
  • In a small bowl, toss the fresh blueberries with 3 tablespoons of all-purpose flour. This helps prevent sinking! Gently fold this mixture into your cake batter.
  • Evenly divide the batter among the three prepared pans. Bake for 18-20 minutes or until a toothpick inserted into the center comes out clean.
  • Once baked, let the cakes cool in the pans for 10 minutes. Then carefully transfer them to wire racks to cool completely.
  • In a mixing bowl, beat together the softened butter and powdered sugar until creamy. Add in lemon juice, zest, heavy cream, vanilla extract, and a pinch of salt. Mix until smooth and fluffy.
  • Once your cakes are cool, spread frosting between each layer and fully cover the exterior. Garnish with extra blueberries and thin lemon slices.

Notes

Allow your cakes to cool fully before frosting to avoid melting. Using fresh ingredients will yield brighter flavors.
