For the Cake

  • 1/2 cup Unsalted Butter Softened
  • 1 cup Granulated Sugar
  • 1/4 cup Honey
  • 3 large Large Eggs Room temperature
  • 1 teaspoon Vanilla Extract
  • 1 cup Nonfat Plain Greek Yogurt
  • 1 cup White Whole Wheat Flour
  • 1 cup All-Purpose Flour
  • 1 teaspoon Baking Soda
  • 1/2 teaspoon Kosher Salt
  • 1 cup Milk Any kind, room temperature

For the Frosting

  • 8 ounces Reduced-Fat Cream Cheese
  • 2 cups Powdered Sugar

For Decoration

  • 1 cup Fresh Blueberries
  • 1 cup Sliced Fresh Strawberries

Preparation

  • Preheat your oven to 350°F (175°C) and prepare a large sheet pan by greasing it or lining it with parchment paper.
  • In a mixing bowl, beat the softened butter until smooth. Gradually add granulated sugar and continue to beat until fluffy and light, about 3-5 minutes.
  • Add honey, large eggs, vanilla extract, and Greek yogurt to the butter mixture. Beat until well combined and smooth.
  • In another bowl, whisk together the white whole wheat flour, all-purpose flour, baking soda, and kosher salt.
  • Gradually mix the dry ingredients into the wet mixture, alternating with milk, until just combined.
  • Spread the batter evenly in your prepared sheet pan. Bake for 20-25 minutes or until a toothpick inserted in the center comes out clean. Let cake cool completely on a wire rack.
  • In a mixing bowl, beat the reduced-fat cream cheese and remaining butter until smooth. Slowly add powdered sugar and beat until fluffy.
  • Once the cake has cooled, frost it generously with the cream cheese frosting. Arrange fresh blueberries for stars and sliced strawberries for stripes on top.

Notes

Chill the cake after decorating for best flavor and texture. Store in the fridge for up to 3 days or freeze individual slices for up to 2 months.
