How to Make Oven-Roasted Atlantic Mackerel

  • Start by defrosting the whole mackerels if frozen. Rinse them under cold water, cleaning out any remaining guts, and pat dry. Lay them in a lightly greased baking pan, and season with a sprinkle of salt.
  • In a medium-sized bowl, whisk together ketchup, mustard, apple cider vinegar, minced fresh garlic, and roasted garlic until smooth.
  • Wash and slice the tomatoes, onion, red bell pepper, and small potatoes.
  • Heat a little oil in a skillet over medium heat. Once hot, add the sliced onion, and sauté for about 5 minutes.
  • Preheat your oven to 420°F (215°C).
  • Use a brush or spoon to generously coat the mackerels with your prepared sauce. Then, sprinkle some black pepper over the fish.
  • Place the prepared vegetables around the mackerels in the baking pan. Cover the entire pan with aluminum foil to lock in moisture and flavor.
  • Slide the pan into your preheated oven and bake for about 40 minutes. Afterward, remove the foil and bake for an additional 2-3 minutes.
  • Once done, take the oven-roasted mackerel out and serve warm.

Notes

Garnish with fresh herbs like parsley or dill for an extra burst of freshness. Store leftovers in the refrigerator for up to 3 days.
