Ingredients
  

  • - 1 tbsp olive oil
  • - 1 small yellow onion diced
  • - 3 cloves garlic minced
  • - ½ tsp red pepper flakes optional
  • - ½ cup sun-dried tomatoes chopped
  • - 1 tsp Italian seasoning
  • - ½ tsp paprika
  • - ½ tsp dried thyme
  • - 4 cups chicken broth
  • - 1½ cups cooked shredded chicken
  • - 1 cup heavy cream
  • - ⅓ cup grated Parmesan cheese
  • - Salt & pepper to taste
  • - 1 cup spinach or kale optional
  • - Fresh basil for garnish

Instructions
 

  • Heat oil in a large pot over medium. Sauté onion for 3–4 mins.
  • Add garlic, red pepper, tomatoes, and herbs. Cook 2 mins.
  • Pour in chicken broth and add chicken. Simmer 10–15 mins.
  • Stir in cream and Parmesan. Simmer 5 more mins.
  • Add spinach/kale if using. Cook 2–3 mins until wilted.
  • Season, garnish with basil, and serve warm.

Notes

- Use rotisserie chicken to save time
- Sub coconut milk and no cheese for dairy-free
- Store leftovers up to 4 days or freeze for later
