Ingredients
  

  • - 2 tbsp olive oil
  • - ½ yellow onion diced
  • - 3 garlic cloves minced
  • - ½ tsp red pepper flakes optional
  • - 2 tbsp sun-dried tomatoes chopped
  • - 2 tbsp tomato paste
  • - 4 cups chicken broth
  • - 1 cup heavy cream
  • - ½ cup grated Parmesan
  • - 4 oz cream cheese cubed
  • - 2 cups shredded cooked chicken
  • - 1 tsp Italian seasoning
  • - 1 tsp dried thyme
  • - 6 oz short pasta
  • - 2 cups baby spinach optional
  • - Salt & pepper to taste
  • - Fresh basil or parsley for garnish

Instructions
 

  • Sauté onion in olive oil until soft. Add garlic and red pepper flakes.
  • Stir in tomato paste and sun-dried tomatoes. Cook 2–3 minutes.
  • Add chicken broth, shredded chicken, Italian herbs, and thyme. Simmer.
  • Stir in cream, Parmesan, and cream cheese. Mix until smooth.
  • Add pasta and simmer 10–12 minutes until tender.
  • Stir in spinach. Season to taste.
  • Garnish with herbs and serve hot.

Notes

- Substitute tortellini or mushrooms for variation
- Use gluten-free pasta as needed
- Freeze the base without pasta for best texture
- Adjust spice level with chili flakes or hot sauce
