Ingredients
  

  • cups all-purpose flour
  • ½ cup almond flour
  • 1 tablespoon matcha green tea powder 🍵
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • 2 large eggs
  • ¾ cup granulated sugar
  • ½ cup unsweetened applesauce
  • ½ cup plain Greek yogurt
  • 1 teaspoon vanilla extract
  • 1 cup semi-sweet chocolate chips 🍫

Instructions
 

  • Preheat Oven: Set your oven to 350°F (175°C).
  • Prepare Muffin Tin: Line a 12-cup muffin tin with paper liners or lightly grease it.
  • Mix Dry Ingredients: In a medium bowl, whisk together the all-purpose flour, almond flour, matcha powder, baking powder, baking soda, and salt.
  • Combine Wet Ingredients: In a large bowl, beat the eggs and sugar until well combined. Add the applesauce, Greek yogurt, and vanilla extract, mixing until smooth.
  • Combine Wet and Dry Mixtures: Gradually add the dry ingredients to the wet ingredients, stirring until just combined. Fold in the chocolate chips.
  • Fill Muffin Tin: Spoon the batter evenly into the prepared muffin cups, filling each about three-quarters full.
  • Bake: Place the muffin tin in the preheated oven and bake for 18-20 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
  • Cool: Remove from the oven and allow the muffins to cool in the tin for 5 minutes before transferring them to a wire rack to cool completely.
