Preparation Steps

  • Marinate the Chicken: In a bowl, combine olive oil, garlic, peri-peri seasoning, and salt. Add chicken strips and marinate for at least 30 minutes, preferably overnight.
  • Prep Vegetables: Wash, peel, and thinly slice all vegetables, ensuring uniform sizes.
  • Sauté Chicken: Heat olive oil over medium-high heat. Cook marinated chicken until golden brown, about 5-6 minutes. Remove and set aside.
  • Stir-Fry Vegetables: Add more olive oil to the pan and stir-fry sliced vegetables in batches, about 4-5 minutes.
  • Blister Tomatoes and Wilt Spinach: Add remaining olive oil and toss in whole cherry tomatoes until they blister. Then stir in spinach until wilted.
  • Combine Ingredients: Add the cooked chicken back to the pan and mix gently.
  • Serve: Enjoy immediately on its own or over rice, quinoa, or pasta.
