Ingredients
  

For the Sweet Potatoes

  • 4 medium sweet potatoes
  • 2 tbsp olive oil

For the Chickpea Filling

  • 1 can chickpeas rinsed and drained
  • 1 tsp cumin
  • 1 tsp coriander
  • 1/4 tsp cinnamon
  • 1 tsp smoked paprika
  • to taste sea salt or lemon juice

For the Garlic Herb Sauce

  • 1/2 cup hummus or tahini
  • 2 tbsp lemon juice freshly squeezed
  • 1 tsp dried dill
  • 2 cloves garlic minced
  • 1/4 cup water or unsweetened almond milk

For the Optional Toppings

  • 1 cup cherry tomatoes halved
  • 1/4 cup chopped parsley finely minced
  • 1/4 cup red onion chopped
  • to taste additional lemon juice
  • to taste chili garlic sauce for heat

Instructions
 

Cooking Steps

  • Preheat the oven to 400°F (204°C) and line a large baking sheet with foil.
  • Cut the sweet potatoes in half lengthwise after rinsing and scrubbing them clean.
  • Toss the chickpeas with olive oil, cumin, coriander, cinnamon, smoked paprika, and a pinch of sea salt.
  • Place the sweet potatoes face down on the same baking sheet, then bake everything for about 25 minutes.
  • Whisk together the hummus (or tahini), lemon juice, dill, minced garlic, and enough water or almond milk to achieve a pourable sauce.
  • Mix the cherry tomatoes, chopped parsley, and red onion with additional lemon juice to create the parsley-tomato topping.
  • Remove the sweet potatoes and chickpeas from the oven when done. Flip the sweet potatoes flesh-side up and gently smash down the insides.
  • Top the sweet potatoes with the roasted chickpeas, drizzle with the garlic herb sauce, and add the parsley-tomato salad on top.
  • Serve immediately and enjoy!
