  • 1/2 cup Coconut oil melted
  • 1 cup Overripe bananas mashed
  • 1/2 cup Coconut sugar can be substituted with brown sugar
  • 2 large Eggs or flax eggs for vegan option
  • 1 cup Nonfat Greek yogurt or applesauce for dairy-free version
  • 1 teaspoon Vanilla extract
  • 1 1/2 cups Gluten-free flour or regular all-purpose flour
  • 1/2 cup Almond meal can substitute with additional gluten-free flour
  • 1 teaspoon Baking soda
  • 1/2 teaspoon Salt

For Optional Add-ins

  • 1/2 cup Nuts (walnuts or pecans) optional
  • 1/2 cup Dark chocolate chips optional
  • 1 teaspoon Cinnamon or nutmeg optional

  • Preheat the oven to 350°F (175°C) and line a 9-inch loaf pan with parchment paper.
  • Mash the overripe bananas in a large bowl until smooth.
  • Mix in the coconut sugar, eggs, Greek yogurt, melted coconut oil, and vanilla extract until well combined.
  • Add the gluten-free flour, almond meal, baking soda, and salt; mix until no dry flour remains.
  • Pour the batter into the prepared loaf pan and bake for 45 minutes to 1 hour.
  • Cool the banana bread in the pan for about 10 minutes before transferring it to a wire rack.

Notes

Serve warm with almond butter for a delightful twist. Adjust sweetness based on ripeness of bananas.
