Prepare the Batter:
Preheat your oven to 350°F (175°C).
In a large mixing bowl, whisk together the all-purpose flour, baking soda, salt, and cocoa powder.
In a separate bowl, beat the eggs and granulated sugar until the mixture becomes light and fluffy.
Gradually add the kefir and oil (or melted butter) to the egg mixture, mixing well after each addition.
Gently fold the dry ingredients into the wet mixture until just combined, being careful not to overmix.
Bake the Cake:
Grease a 9×13-inch baking pan and pour the batter into it, spreading it evenly.
Place the pan in the preheated oven and bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
Once baked, remove the cake from the oven and allow it to cool completely in the pan.
Prepare the Chocolate Glaze:
In a small saucepan, heat the heavy cream over medium heat until it begins to simmer.
Remove from heat and add the chocolate chips, stirring until the mixture is smooth and the chocolate is fully melted.
Glaze the Cake:
Once the cake has cooled, pour the chocolate glaze over the top, spreading it evenly.
Sprinkle the shredded coconut over the glaze, if desired.
Allow the glaze to set before serving.
