Ingredients
  

For the Brisket

  • 1 piece Corned Beef Brisket Opt for a flat cut for best results.
  • 1 cup Light Brown Sugar Substitute with granulated sugar if needed.
  • 1 tablespoon Freshly Ground Black Pepper

For the Spice Mix

  • 1 tablespoon Coriander Seeds Feel free to swap with pickling spice if unavailable.
  • 1 tablespoon Whole Allspice Berries Crush slightly for enhanced distribution.
  • 1 teaspoon Whole Cloves Ground cloves can work too in a pinch.

Brisket Preparation

  • Preheat the oven to 325°F (163°C).
  • Rinse the brisket under cold water to reduce excess saltiness. Trim away any thick layers of fat for a leaner dish.
  • Pat dry the brisket with paper towels. Place it fat side up in a roasting pan set on a rack for optimal airflow.
  • Crush spices in a bowl: Lightly crush the coriander seeds, allspice berries, and cloves.
  • Mix the crushed spices with brown sugar and black pepper.
  • Rub the spice mix evenly over the brisket. Pour 6 cups of water into the pan to keep the meat moist during cooking.
  • Cover tightly with aluminum foil and roast for 2 hours.
  • Remove the foil and roast for an additional hour until the brisket is fork-tender and the crust is beautifully caramelized.
  • Let it rest for 15 minutes before slicing.

Notes

Optional: Serve with Dijon mustard for an extra layer of flavor.
