Ingredients
  

For the Chicken

  • 2 tablespoons Olive Oil or avocado oil as a replacement
  • 1 pound Chicken Breast can substitute with turkey or shrimp

For the Base

  • 1 cup Rice or Quinoa quinoa is gluten-free

For the Fresh Vegetables

  • 1 cup Cucumbers choose your favorite crunchy options
  • 1 cup Tomatoes cherry tomatoes are a great choice
  • 1/2 cup Red Onions can use green onions for milder flavor

For the Tzatziki Sauce

  • 1 cup Greek Yogurt or dairy-free yogurt for vegan
  • 2 cloves Garlic adjust to taste
  • 2 tablespoons Lemon Juice keep zest for extra flavor
  • 1 tablespoon Dill fresh preferred

Instructions
 

Preparation

  • Whisk together olive oil, minced garlic, lemon juice, and your choice of herbs. Pound chicken to about 1/2 inch thickness; marinate for at least 30 minutes or up to a few hours.
  • In a mixing bowl, combine Greek yogurt, diced cucumbers, pressed garlic, lemon juice, and dill. Stir well and set aside.
  • Prepare rice or quinoa according to package instructions.
  • Preheat air fryer to 380°F. Grill marinated chicken for approximately 7 minutes per side or until it reaches an internal temperature of 165°F.
  • Layer the cooked rice or quinoa, fresh vegetables, sliced grilled chicken, and tzatziki in each bowl. Drizzle with olive oil and lemon juice.

Notes

Customize your bowls with seasonal veggies and herbs for more variety. Garnish with fresh parsley or feta cheese if desired.
