How to Make Tart Cherry Pie

Stir in yogurt, then pour cold water over the mixture, combining until it forms a shaggy mass. Shape it into a disk, wrap tightly with plastic wrap, and chill for at least 30 minutes.
  • On a lightly floured surface, roll out the chilled dough into a long rectangle. Fold it into thirds like a letter, rotate, and repeat two more times. Shape it back into a disk and chill for at least 1 hour or overnight for the best texture.
  • In a medium saucepan, add the frozen tart cherries, sugar, and cornstarch, stirring to coat evenly. Add water, turn the heat to medium, and stir until the mixture thickens and coats the back of a spoon—this takes about 10 minutes. Stir in butter, almond extract, and a pinch of salt to enhance the flavors.
  • In a small bowl, stir together flour, brown sugar, pure cane sugar, and salt. Pour in the melted butter and almond extract, mixing until crumbles form. Set aside to firm up just a bit.
  • Preheat your oven to 350°F. Roll out the pie crust to fit your pie tin, trimming any excess.
