  • 1 medium Onion Use shallots for a milder taste.

  • 1/4 cup Celery Leaves Substitute with parsley if unavailable.
  • 2 leaves Bay Leaves Fresh or dried are both acceptable.

For the Protein and Texture

  • 1 pound Ground Turkey Choose 93/7 for a leaner soup or 85/15 for more flavor.
  • 1 teaspoon Salt Adjust to taste.
  • 1 teaspoon Garlic Powder Fresh garlic can be used instead.
  • 1/2 teaspoon Pepper Black pepper preferred.

For Flavorful Seasoning

  • 1 teaspoon Rosemary Fresh herbs can be used for a brighter taste.
  • 1 teaspoon Oregano
  • 1 teaspoon Cumin
  • 1/2 teaspoon Smoked Paprika

For the Heartiness

  • 1 cup Sweet Potato Can swap with regular potato or butternut squash.
  • 1 medium Plantain Banana can work in a pinch but alters flavor.
  • 1 cup Tomato Sauce Use crushed tomatoes for a chunkier base.
  • 4 cups Bone Broth Vegetable broth is a good vegetarian alternative.
  • 1 can Garbanzo Beans Rinse before use for fresher taste.

Preparation Steps

  • Heat olive oil in a large pot over medium heat. Sauté diced onion, minced garlic, celery leaves, and bay leaves for 3-4 minutes until they turn translucent and fragrant.
  • Add the ground turkey to the pot, breaking it up as it cooks. Sauté for about 5-7 minutes, until it is well browned and no longer pink.
  • Sprinkle in salt, garlic powder, black pepper, rosemary, oregano, cumin, and smoked paprika. Stir and toast the spices for 30 seconds, letting their aromas bloom.
  • Toss in sweet potato chunks and plantain slices. Mix everything well, ensuring the turkey and veggies are evenly distributed.
  • Pour in the tomato sauce and bone broth. Fold in the drained garbanzo beans, stirring until combined.
  • Secure the lid on your pressure cooker and cook on medium pressure for 15 minutes.
  • Once cooking time is complete, carefully release the pressure. Stir the soup, taste, and adjust seasoning to your preference before serving.

Notes

Optional: Top with fresh cilantro or a squeeze of lime for an extra burst of flavor.
