Ingredients
  

  • - 1 lb chicken breast or thighs
  • - 1 cup long-grain rice white or brown
  • - 1 can black beans 15 oz, drained
  • - 1 cup corn
  • - 1 medium onion diced
  • - 1 bell pepper diced
  • - 2 tbsp olive oil
  • - 1 tsp cumin
  • - 1 tsp chili powder
  • - 1 tsp garlic powder
  • - Salt & pepper to taste
  • - 1.5 cups water or broth
  • - Juice of 1 lime
  • - Fresh cilantro
  • - Optional: Cheese sour cream, avocado, jalapeños

Instructions
 

  • Season chicken and sauté in olive oil until browned.
  • Add onion and bell pepper, cook until soft.
  • Stir in rice, beans, and corn.
  • Add water/broth, bring to boil, then simmer covered 15–20 minutes.
  • Fluff, garnish with lime and cilantro. Add toppings as desired.

- Use brown rice with extra cooking time
- Customize toppings and protein as desired
