Ingredients
  

  • **Chili Mac**
  • - 1 tbsp olive oil
  • - 4 oz pancetta diced
  • - 1 lb lean ground turkey
  • - ½ medium onion chopped
  • - 4 oz canned or fresh green chiles
  • - 1 tbsp chili powder
  • - 1 tbsp smoked paprika
  • - 2 tsp dried marjoram
  • - 2 tsp dried oregano
  • - 1 tsp garlic powder
  • - 1 tsp salt
  • - 15 oz canned beans drained and rinsed
  • - 1 tbsp tomato paste
  • - 15 oz tomato sauce
  • - 15 oz diced tomatoes
  • - 8 oz elbow macaroni
  • - 3–4 cups chicken broth
  • **To Finish**
  • - ½ cup half & half or whole milk
  • - 2 cups shredded cheddar or cheese blend
  • **Toppings optional**
  • - Sour cream
  • - Green onions
  • - Pickled jalapeños
  • - Cilantro
  • - Extra cheese

Instructions
 

  • Sauté pancetta in olive oil on Sauté mode. Add turkey and brown. Remove and set aside.
  • Sauté onions and green chiles until soft. Add spices and stir.
  • Add meat and beans back. Add tomato products and macaroni. Pour broth to just cover pasta.
  • Pressure cook on high for 4 minutes. Quick release.
  • Stir in half & half and cheese. Top and serve!

Notes

- For stovetop, simmer covered until pasta is cooked
- For freezer meals, portion before adding dairy
- Add chili flakes if you like more heat
