  • cup Light brown sugar packed
  • ¾ teaspoon Ground cinnamon
  • ¼ teaspoon Ground nutmeg
  • ¼ teaspoon Fine sea salt
  • 4 tablespoons Unsalted butter melted and cooled
  • 8 large Eggs
  • 1 cup Whole milk
  • ½ cup Heavy cream
  • 1 tablespoon Vanilla extract

For the Topping

  • ½ cup All-purpose flour
  • ½ cup Light brown sugar packed
  • ½ cup Old-fashioned oats
  • ¾ teaspoon Ground cinnamon
  • ¼ teaspoon Fine sea salt
  • ½ cup Unsalted butter cold, sliced into ¼ inch cubes

  • Spray the Pan: Start by spraying a 13x9 glass pan with cooking spray. Spread the cubed brioche bread evenly in the pan.
  • Whisk the Mixture: In a medium-sized bowl, whisk together the light brown sugar, ground cinnamon, ground nutmeg, and fine sea salt. Stir in melted butter, add in the eggs, whole milk, heavy cream, and vanilla extract and whisk until smooth. Pour over the cubed bread.
  • Toss the Bread: Gently toss the cubed bread in the egg mixture to ensure it’s well-coated. Don't overmix; a few chunks can be delightful.
  • Refrigerate the Casserole: Cover the pan with plastic wrap and place in the refrigerator. Chill for at least 3 hours or overnight (up to 12 hours).
  • Prepare the Topping: Stir together the all-purpose flour, light brown sugar, old-fashioned oats, ground cinnamon, and fine sea salt in a small bowl. Incorporate the cold cubed butter and mix until coated, breaking down until it resembles a dough-like crumble.
  • Preheat and Bake: Preheat your oven to 350°F. Take the topping mixture from the fridge, break it into small pieces, and spread it evenly over the casserole.
  • Bake to Perfection: Bake for about 45-60 minutes, until the topping turns golden brown and is crispy.
