  • 2 pounds Red Potatoes or Yukon gold/fingerling potatoes for different texture
  • 3 tablespoons Olive Oil or avocado oil
  • 1 cup Grated Parmesan Cheese avoid shredded cheese

For the Seasoning

  • to taste Salt
  • to taste Pepper
  • 3 cloves Fresh Garlic minced
  • 1.5 teaspoons Fresh Rosemary optional; substitute with Italian seasoning if needed

For Garnishing

  • 1/4 cup Fresh Parsley chopped

Preparation

  • Preheat your oven to 400°F (200°C) and prepare a baking sheet with non-stick spray and a dusting of flour.
  • In a large mixing bowl, combine the potato chunks, olive oil, grated Parmesan cheese, rosemary (if using), salt, and pepper. Toss until well-coated.
  • Spread the potato mixture in a single layer on the baking sheet, ensuring they aren't overcrowded. Bake for 30 minutes until golden brown.
  • Remove the baking sheet and toss the potatoes with minced garlic. Bake again for another 15 minutes until tender and lightly browned.
  • Sprinkle the potatoes with fresh chopped parsley before serving.

Notes

For extra flavor, squeeze lemon juice over the potatoes before serving. Store leftovers in an airtight container in the fridge for up to 3 days.
